3. Stages of Garlic Fermentation
a.Mycin activation stage

Medium temperature fermentation: the temperature is 70~75 ℃, the humidity is 85%, and the medium temperature fermentation is conducted for 22 days. At this time, the garlic fermentation has been basically completed
Normal temperature fermentation: The final fermentation lasts for 7 days at 40 ℃ and 50% humidity. At this time, the quality of black garlic has reached the international standard
Finished product sterilization: after 30 days of fermentation, black garlic will grow into many fungi, which is not suitable for storage. We need to sterilize the finished product
