Pea cake, also known as pea yellower, is a traditional snack in
Beijing, and it is also a seasonal dish in Beijing in spring.
During production, peas are usually ground, peeled, washed, boiled,
fried with sugar, coagulated, and cut into pieces. After the
finished product, the appearance is light yellow, delicate, and
melts in the mouth. The taste is sweet, cool, and refreshing.
The pea cake in the Qing Dynasty is made of high-quality white peas
and is famous as Cixi's favorite food; the folk rough pea yellow is
a typical spring food, which is often seen in spring temple fairs.
Ingredients
Peel and dry yellow peas 230g, baking soda 2g, white sugar 65g, and an appropriate amount of water.
Step:
1. Wash and drain the peas, add baking soda and mix well, soak in
water, let stand for 5-6 hours, and the level should be 3 cm below
the peas.
After 2.5-6 hours, pour out the soda water, rinse with water 4-5
times, drain and put it in a pot, add water to a boil, and the
amount of water should be 4-5 cm below the peas. Skim off white
foam that will form during the boiling process. After the water
boils, turn to medium heat and continue to cook until most of the
peas are blooming and crisp.
3. Stir the peas (soup) that have been soft, and try to break the
peas as much as possible.
4. Strain the pea paste through a strainer to make the peas into a
fine, thick paste.
5. Add sugar to the pea paste and mix well, put it back on the heat
and continue to heat, simmer until it thickens, and the pea paste
becomes semi-solid instead of liquid, then remove from heat.
6. Pour it into the mold, scrape the surface, and place it at room
temperature until the temperature is slightly lowered and it is not
hot, then put it in the refrigerator.
7. Refrigerate for more than 4 hours, you can take it out of the
mold, cut it into pieces and eat it.
