Fresh food principle:
1. Composite atmosphere of fresh packaging, also known as gas
replacement packaging, internationally known as MAP packaging (ie
Modified Atmosphere Packing). Composite air conditioner packaging
machine principle is the use of composite fresh gas (2-4 gas
mixture according to the characteristics of food), the air inside
the box / bag replacement, change the box / bag of food outside the
environment, inhibit bacteria (microorganisms ) Growth and
reproduction, slow down the metabolism of fresh fruits and
vegetables, thereby extending the shelf life of food or shelf life.
2. Atmospheric fresh air generally consists of carbon dioxide
(CO2), nitrogen (N2), oxygen (O2) and a small amount of specialty
gases. CO2 gas has the function of inhibiting the growth and
propagation of most spoilage bacteria and molds and is the main
antibacterial component in the fresh air; O2 can restrain the
growth of most anaerobic bacteria, maintain the flesh color of
fresh meat and maintain aerobic respiration of fresh fruits and
vegetables, and maintain the freshness ; N2 is an inert gas, and
food does not work as a filling gas, and CO2, O2 and special gas
composition of fresh gas. Different food fruits and vegetables,

Nitrogen, inert gas, does not react with food, nor is absorbed by food. It is used as filling gas to prevent package slump caused by gas escaping such as carbon dioxide. Different food and fruit have different preservative gas ingredient and proportion. For crop MAP, it is critical that oxygen permeability rate should be matched with respiratory rate.
MAP is commonly utilized in snacks, coffee, cheese, pasta, baked goods, sandwiches and processed meats. It is also becoming increasingly popular in fresh-cut produce, like pre-packaged salads and fruit, for convenience, quality and more variety.
